“There are many theories as to the origins of Tapas. El Gato Negro prefer the one that in Andalusia, in the sunny south, they have always loved outdoor meals, invariably accompanied with a glass or two of sherry.”
“However, as the delicate aroma of the sherry attracted hosts of irritating insects, a small cover (tapa) or dish was placed over the glass with a few olives, as well as a small piece of fish, ham, sausage, or other appetising morsels.”
